It was 105 degrees today! What?! I was anticipating this and knew I had to go out today and run some errands so I figured Penelope and I would get up early and head out before the heat struck. We walked out the front door at 9am and I instantly started sweating. I am not kidding you! How do you people that have been living here for awhile handle this weather. Seriously, how can you ever get use to it. My mom in law asked if the forecast was calling for the same for the rest of the week. I said umm try the rest of the summer! UGH! And here my mom is complaining that it is cold and rainy in San Diego, send some my way please.All I gotta say is thank God for air conditioning.

I am curious what the weather is like where you are at right now?

Bottom Row: Grapes, Sweet Cheese Dip for Strawberries, Trader Joe's Olive Hummus for Flatbread

Fathers Day Crepes

I asked Chris if he wanted me to make him anything special today and he asked for Crepes.

Crepe Batter

1 Cup of Flour

1 Eggs

1/2 Cup of Milk

1/2 Cup of Water

1/2 Tsp Salt

Whisk Flour, Egg and salt first then gradually add the Milk and Water. Stir until batter is smooth.

Filling

4 oz of Cream Cheese

1 Cup of Ricotta

3 Tbs of Powdered Sugar

Couple drops of Vanilla

Mix Everything together until smooth and creamy .

Lightly grease a non stick pan with some butter spread a thin amount of crepe batter to cover the pan. Lightly brown crepe on one side then flip and do the same on the other. These cook really quick! Spread the filling in the middle of the crepe and fold both sides over the filling. Flip over on plate so seam is facing down then sprinkle with Powdered Sugar and top with Sliced Strawberries and Whip Cream.

So I received the doggy bed from CSN Stores, I actually got it several days ago but was testing it out before writing my review. Before I go into my review I just want to say that CSN Stores is a great company to deal with. Having ordered from them in the past I have never had a problem and my items have always arrived quickly. With over 200 stores to shop from you are bound to find something that you want or need, so if you haven't checked out www.csnstores.com yet you should really do so.

On to the doggy bed I received from PetsByCSN. First off the bed is nice, it is a little smaller then it appeared in the picture but then again I guess I should have read the dimensions. Not that it matters Kiwi is a little runt, she weighs about 9lbs so it's the perfect size for her. I love that it matches our sofa, it's the same brown suede like material, very modern and stylish for a doggy bed. :) When I first introduced her to it she jumped out and immediately jumped onto my pillow. Chris gave me the idea to put the bed on my pillow thinking that would persuade her to lie in it. It didn't and instead this is what I found...

Mr. Rat dozing in her bed. Since we had been keeping Kiwi's crate in our bedroom and locking her up to sleep at night after in accident she had on our bed. ( I am not even going to go there I am still so mad, Grrrrr.) I decided to move her crate and place her new bed in the same spot. Guess what it worked! She loves her bed and is sleeping in it now. When she gets caught doing things she is not suppose to do like getting into the trash all I have to say is "in your bed" and she immediately runs to her bed and plops down. I think the only issue we are going to have with this new bed is Having Mr. Rat and Kiwi fighting over it. Finally I get my side of the bed back! Thanks CSN Stores!

London Broil!

I went grocery shopping on Monday and Albertsons had a really good deal on London Broil. $1.99 a pound! I got 2 huge pieces for around $5.00 each and today Chris grilled up one of them for dinner.

We had Grilled London Broil, Steamed Broccoli, Garlic Bread and Boysenberries and Nectarines. Look at Penelope's plate, she enjoyed her dinner too.

We didn't finish the steak because like I said the piece was huge so it looks like we are having steak sandwiches for dinner tomorrow. YUMMY!

OK, I admit I really like Jack in the Box. I know not many people are fond of it but I am a sucker for their Grilled Sourdough Jack and Tacos. Mmm mmm greasy unhealthy goodness. :) Tonight for dinner we made our version of the Grilled Sourdough Jack and let me tell you not only did we make 3 burgers for the price of one with ingredients to spare but they were pretty tasty and I am sure healthier. OK, probably not much healthier but still good!

I crisped some Bacon in the oven and grilled some pieces of Sourdough Bread with Butter while Chris grilled up some Burger Patties and melted some Muenster Cheese on them. We spread Mayo on the Bread, topped with the Patty, slices of Bacon and slices of Tomato. Yum! By the way the glass in the pic has some diet grapefruit soda, that I made myself! More on that later...

Tonight I made Chris Houston Chicken for dinner. I got the recipe here. I made the easier version and it came out really good. Chris said it's his second favorite dish next to "ketchup shrimp". "Ketchup shrimp" is a Japanese meal I make called Ebi no chiri so-su, he calls it that because there is ketchup in the recipe. Speaking of Japanese...this was Penelope's dinner.

Edamame, Miso Soup and White Rice with Soy Sauce. She loves Miso soup and edamame. Everyone really enjoyed their dinner tonight. YAY!

Repeat of yesterday...I think from now on I will just post if we have a successful day. Oh, I am not giving up though. I am going to keep at it because I know Penelope is a smart little girl and she will get it. I just need to be patient. I received an email the other day from someone who had read my blog and she said that a pediatrician had once asked her "when was the last time you saw a 16 year old in diapers?". So I am going to back off a little and I think getting those big girl undies on her and maybe putting a waterproof sheet on her bed will help.

So today I backed off "nagging" Penelope about using the potty and while she didn't have any accidents she also didn't use her potty. On the other hand today was the first day Kiwi didn't have an accidents in the house or get into Mr. Rats litter box. So because of that I am considering today a success. Wheee!

Today was a little better, she actually went in the potty. All day long I kept harassing her with "do you need to go potty?" and of course she didn't need to go until nap time. Then finally in the evening I left her alone while she played and went into my bedroom to do a couple of things and she runs in and says "mommy, big girl potty" so I chase after her to the bathroom and sure enough her potty is full. YAY! OK, it seems like there is a pattern developing here, every time I keep reminding her about the potty and telling her she needs to go she doesn't but as soon as I leave her alone she goes. Hmmm....I am going to try something tomorrow. I am not going to keep asking her if she needs to go and just leave her alone about it and see if she just uses it on her own. I told you she is really independent these days so maybe this is just another thing she doesn't need help with. We'll see...

Today was another repeat of yesterday. She just won't go until she has that diaper on her at nap time. I am constantly reminding her, bribing her with stickers and making sure her sippy is full but nothing. I really need to go out and get her some big girl undies so she doesn't have to be semi nude all day. Maybe once she goes in her undies and feels how wet and uncomfortable it is she will be more inclined to go in the potty.

Oh my have I mentioned the weather here? It's hot! I checked the forecast and it will be in the 90's all week! I guess that's what I have to look forward to for the next few months. Sunday and Monday it is going to be 98 degrees UGH! I was curious what the highest recorded temperature in Bakersfield was so I looked it up. 118 degrees!!!! That was in 1908, we definitely don't need a repeat of that. The lowest recorded temperature was 12 degrees in the same year. Now that's more like it...seriously I love the cold. Oh why oh why did we ever leave Alaska...hush Chris!

Penelope didn't use the potty at all today! She had a wet diaper when she woke up this morning. When we left for My Gym I put a training pant on her and reminded her to let me know when she needed to go potty. She never mentioned it. Once home from My Gym I removed her diaper and to my surprise it was dry. I put her in a diaper for her nap and when she woke up she had gone both 1 and 2. The rest of the evening she didn't go. She is constantly drinking water so I don't know if she is just holding it till I get that diaper on. She is sleeping now and I am pretty sure I will find a wet diaper in the morning. Oh well tomorrow's another day.

We were craving Wing Stop fries today, OK I was craving Wing Stop fries Penelope wanted "cheeese mommy". Have you ever had Wing Stop fries? They are sooo good and sooo addictive. I am pretty sure they put sugar on them. So instead of going out and spending money I made my own version of Wing Stop fries with sugar on them. Hey, don't knock it till you try it. These things were sooo good and sooo addictive. Just deep fried some plain russet potatoes with the skin on and sprinkled them with seasoned salt and sugar when they were finished. These tasted almost identical to Wing Stops. YUMMY! I wish I had some of their blue cheese dressing to dip them in. Their blue cheese is the best! So for Penelope's bento today she had a child's dream lunch. Chicken Nuggets and French Fries sprinkled with Sugar. I know not very healthy but she she hasn't had any candy or chocolate since Chris left for school. ;p She deserves a treat!

Penelope went in the potty twice today! She went this morning and then again this evening. I've noticed that the times she has gone are the times I have left her alone and stopped bugging he with "do you need to go potty?". Must be that independent thing she has going right now. She doesn't want any help with anything, "I do it mommy". I am going to keep it up cause I really do think we are making some progress. As for Kiwi, well she is still driving me nuts. Will this dog ever learn?! Anyone else out there have any experience on housetraining a little dog? I have heard little dogs are harder then big ones. Let me know if you have any tips!

Today didn't go as good as yesterday. Penelope didn't go all morning again and I put a diaper on her around 1:30 for her nap. When she woke up of course she had went 1 and 2 in her diaper. a couple hours later she had a little accident on the living room floor, good thing we have tile. After that she kept saying she had to go and running to her potty in the bathroom but she would just sit there singing songs and not going. Finally I asked her if she wanted to move her potty into the living room so she could watch The Berenstain Bears and she said "yes mommy yes". I put her potty in front of the TV and she sat on it while she watched. When the cartoon was all over Penelope said "all done mommy", and when she stood up her little potty was full of P. YAY! That was the last she went before I put a diaper on her for bedtime. I guess it didn't go too bad I think we are making progress despite the one accident. As for Kiwi...I am starting to think she is just dumb. ;p
