What was I thinking???

I was trying to figure out what to make Penelope for breakfast this morning when I opened up the pantry and saw a box of Cap'n Crunch cereal. Then I remembered an episode of Diners, Drive ins and Dives I saw a while back...Cap'n Crunch French Toast. I am not sure how the particular restaurant on that episode makes it but I thought I would just invent my own. I dipped once piece of bread into some egg that had been whisked with a little cinnamon and vanilla then pressed the soaked bread slice into some crushed up Cap'n Crunch. Fried up both sides in a little butter and there you have some Cap'n Crunch French Toast.

I know, pretty bad huh? Oh well, she enjoyed her not so healthy breakfast. I had a little bite because I was curious and it was just a little too sweet for me. I think dinner tonight is going to be a nice big green salad with lots of veggies to make up for this breakfast. :)

    I would have never thought of that on my own! I bet she gobbled it up! I think I may try that one of these days but I can't imagine putting syrup on it. Hrmm....going to think of an alternative!
