King Salmon!

Yesterday our neighbors went deep sea fishing and caught several King Salmon. They were kind enough to give us this huge fillet.
So tonight we had a yummy dinner of salmon, rice and broccoli.

Broiled Salmon
Salmon Fillet w/skin on
Mayonnaise
Rice Vinegar
Soy Sauce
Salt
Butter

Cut your salmon fillet into serving pieces and then generously salt both sides. Cover and refrigerate for at least 30 minutes to let the salt soak into the fish. Meanwhile mix the mayonnaise with the rice vinegar and soy sauce. These measurements really depend on how much fish you are cooking and your tastes. I did 8 tablespoons of mayo mixed with 1 tablespoon of the vinegar and 1 tablespoon of soy sauce. This was about a 3 pound fillet and I had sauce left over. Hope this helps! Lightly grease a broiling pan and then place the salmon skin side down. Broil for about 8 minutes. (Be careful not to almost burn your kitchen down while you are broiling. ;p Seriously...) Turn the salmon around so the skin is facing up and broil another 4 minutes to get the skin crisp. (Again, make sure you don't panic if you see flames, or at least make sure you have a calm husband nearby to put them out. :p) Take the salmon out turn over again so the skin is facing down and spread the mayo sauce onto the flesh. Pop back in the broiler for 2 more minutes. The salmon should be crispy on the outside and super moist inside. Even though I almost lost my kitchen this meal was sooo worth it. :) Enjoy!
