1 lb of Ground beef (will make 12 sliders, guess what we are having for lunch tomorrow!?)
Seasoned salt

1/4 cup of Mayonnaise

Add season salt, pepper and minced onion to ground beef. Be very generous with the minced onion and add as much salt and pepper as you like. Brown ground beef in a skillet until browned and drain oil. Put in a bowl and mix in the cheese and mayo. On a foil lined baking pan that has been lightly greased place the bottom buns down. Form ground beef mixture into small patties and place on top of the buns and cover with the top bun. Take a lightly greased piece of foil and cover the sliders and bake in the oven at 350 for about 20 to 25 minutes until cheese is melted. We topped these with pickles, mustard and ketchup and had a salad as a side. Chris loves his croutons, haha.
Last night I made a Shrimp Pizza for dinner, it was really good!
Pillsbury Thin Crust (the kind in the can)
1 tbl Olive Oil
2 cloves of Garlic minced
1 cup Mozzarella
1 cup Cheddar
1/4 cup Shaved Parmesan
Italian Seasoning
Sliced Red Onion
Sliced Roma Tomato
About a 1/2 pound of Shrimp
I used the Pillsbury Thin Crust in a can because the last time I tried to make homemade pizza crust (several years ago) it was a disaster. This thin crust pizza is really good too. Spread out your crust onto a lightly greased pizza pan or cookie sheet. I have a Pampered Chef Bar Pan made from clay and it's amazing! Mix the garlic into the olive oil and then spread the oil all over the pizza crust. Bake for 7 minutes at 400 degrees. Meanwhile saute shrimp in a little olive oil and season with Cajun seasoning. Cook until just turning pink and then remove from heat. Do not cook all the way! Mix all 3 cheeses along with some Italian seasoning in a bowl. Remove crust from oven once the 7 minutes is up and cover with half of the cheese mixture. Top with some sliced red onion and tomatoes, use as much as you like. Then sprinkle half of the remaining cheese on top of the veggies. Top with the shrimp and sprinkle remaining cheese on top. Bake for another 15 minutes.
If you notice in the picture the left side had some olives, that was Penelope's piece, she requested olives on her pizza. ;)

I took this picture last night when Penelope was sleeping. The last few nights Penelope has been getting her dolly ready for bed too. She lays her down on a pillow, covers her with a blanket and gives her a drink of water and a kiss and tells her goodnight, then Penelope gets into bed. It's too cute. In the morning when I go get her she jumps out of bed and says "time to wake up dolly" uncovers her and picks her up and puts her away behind the bed. Awww, poor Penelope needs a little sister. :)
I received the Easy Lunchbox that I won. When it arrived here one of the lids was damaged, I sent out an email to ask for a replacement and I got an immediate reply telling me that they would send out a new container set free of charge. They don't sell the lids separately. I received my replacements in 2 days! Talk about good customer service! The kit comes with a fabric case and a set of 4 containers each with a different colored lid. You can put 1, 2, even 3 containers in the case! I made Chris' lunch today and used one case and still had plenty of room for an ice pack and a drink. I love this lunchbox!
Another cool thing is you can only fit so much food in the container slots which makes for good portion control. Chris' lunch for today was Roasted Chicken (leftover from last nights dinner) on a Sourdough Roll, some Black Olives, Potato Chips and a String Cheese. In celebration of National Ice Cream Day and because it was HOT, dad and I made Penelope her very first Banana Split. She loved it of course!
I made a Spicy Chicken Stir Fry tonight for dinner. It was sooo good, even Penelope loved it and she tried to eat it with chopsticks!
Diced Chicken Breast
Frozen Broccoli
Chopped Green Onion
Minced Garlic
Fresh Minced Ginger (you can also use powdered ginger)
Soy Sauce
Hoison Sauce
Chili Garlic Sauce
Red Pepper Flakes
In a wok or skillet cook the Chicken in a little sesame oil. Add the Onion, Garlic and Ginger and cook till Chicken is no longer pink on the outside. Add the Broccoli, and the remaining ingredients and cook for a few minutes until Broccoli is no longer frozen and Chicken is cooked on the inside. Serve over white rice. This is really easy and quick to make and if you have a rice cooker you can cook up your stir fry while the rice cooker is doing it's thing. Just add as much of the ingredients as taste good to you. We like our food pretty spicy around here but you can leave out the chili flakes and only add a small amount of the chili garlic sauce if you don't.
Top: All natural fruit gummies with a fruit and veggie and multivitamin mixed in, half an all beef hotdog, sliced strawberries with whipped cream.
Bottom: Scrabble cheese crackers-these are great she loves shouting out each letter before eating them, the other half of her hotdog, and some sliced string cheese.
I forgot to let everyone know that I passed my driving test! I now have a valid California Drivers License. So what did Penelope and I do last weekend? We got up bright and early and headed straight for the library to get our library cards. YAY! Penelope loves the library and she knows we have to be quiet in there, she puts her finger on her lips and says "ssshh" whenever she hears the word library. She had fun checking out books and we are headed back this weekend. I am so excited that Penelope loves books I hope this continues as she gets older.
Last night we were suppose to have Shrimp Scampi for dinner according to my weekly menu but I just wasn't feeling it. Instead I made shrimp burritos and they came out really good! Here is a pic of my burrito before I rolled it up.
Shrimp
Cooked White Rice
Corn
Green Onion
Serrano Pepper
Cilantro
Garlic
Cumin
Chili powder
Salt
Flour Tortillas
Toppings of your choice, we did Cheese, Sour Cream and Hot Sauce
In a little oil saute some sliced green onion (I used about 3), 1 Serrano Pepper (you can use as much as you want to make as spicy as you want) and some Corn ( I used a leftover corn cob from the night before, it was really good because it had a smokey flavor from the grill). Add the Shrimp (I used one pound), Garlic, Cumin, Chili Powder and Salt to taste. Then add a small amount of water like a couple of tablespoons and the Rice (I used 1 cup cooked). Stir it all together until the Shrimp is cooked through and the water has evaporated. If you have a lemon/lime I would add a few squeezes in here as well, we were out. Warm up your flour tortillas and fill with Shrimp/Rice mixture and top with your favorite burrito toppings. So delicious!
