Now that we are back to our normal routine, until Christmas that is, how was every ones Thanksgiving? Mine was great! I had two! Wednesday before Thanksgiving we got together at my brothers house and had a delicious dinner. I brought over an appetizer of smoked salmon with cheeses and crackers.

This four cheese and bacon mac and cheese was adapted from Mac & Cheese: More then 80 Classic and Creative Versions of the Ultimate Comfort Food.
It was amazing and there were no leftovers to prove it. On Thanksgiving day I cooked at home with the help of my mom and grandma. I made a tasty green bean casserole.
Green Bean Casserole
4 cups Fresh green beans
1 cup of Sliced portabella mushrooms
1 cup of Diced onions
1/2 Stick of butter
3 Cups of chicken broth
2 cans of Cream of mushroom soup
Salt & pepper
Garlic powder
French fried onions
Preheat oven to 350. Boil green beans in chicken broth for 10 minutes then drain. In a skillet melt butter and then saute the mushrooms and onions. Add green beans, mushrooms soup and some French fried onions along with the seasonings. Stir well and then pour into a baking dish top with a few more French fried onion and then bake uncovered for about 15 to 20 minutes.
I also made The Pioneer Woman's Creamy Mashed Potatoes and had store bought stuffing mix because Chris insists it is the best. Penelope was in charge of making the cranberry sauce and it was seriously some of the best cranberry sauce, more on that in another post. Finally, the star of our Thanksgiving... This year we tried something different and ordered a Turducken. Yes we did! For those of you who don't know or can't figure out what a turducken is, it's a crazy mash up of 3 birds. Duck, chicken and turkey are all deboned crammed together and then tied up to resemble a turkey that hasn't been completely violated.
We ordered ours from Cajun Grocers. It arrived frozen, ready to thaw and cook for 4 hours, oh and did I mention it was also stuffed with a cornbread creole sausage stuffing? Our birds turned out delicious.
Juicy, well seasoned, and although the duck was my least favorite part it did give the turkey a lot of flavor. Hey, you gotta try one at least once in your life.
