Wings!

There is a wings restaurant in Anchorage called Wings n Things. Chris claims that they have the best wings ever, they are pretty good. Today I tried to replicate their wings and I got pretty close.

The trick is to coat them in corn starch and deep fry them so they come out nice and crispy.

Take your chicken wings and make sure you dry them with paper towels really well. Toss them with corn starch so they are completely covered. Next mix some wing sauce, we used Frank's Red Hot Buffalo Wing sauce but you can use whatever you like best, with some melted butter in a sauce pan and keep warm. Meanwhile in a large pot heat some oil, you gotta make sure the oil is extremely hot before you start putting the wings in. If you have a deep fryer this will work best. You can test the oil by putting the tip of a wing in, if it starts to sizzle then the oil is about right. Fry the wings making sure not to overcrowd the pot. These will not take long to cook. Once you remove the crispy wings from the oil place them in a rack that has been placed over a pan so that the oil drains onto the pan. This will keep the wings crispy. Once all your wings are done place them in a large bowl and then pour your sauce on top of them. You can use as much or as little as you like depending on how saucy you like your wings. Toss them with the sauce and you're finished. Serve with blue cheese dressing!
