Best Ever...
September 02, 2013This morning I woke up and decided to make Chris and I an omelet (Penelope had waffles). This turned out the be "the best omelet I have ever eaten" said Chris.
Best Omelet Ever
For the omelet-
4 slices of bacon cut in half
6 eggs
Half & Half
1/2 cup Shredded Jack cheese
1 tbs. Butter
Salt & Pepper
For the fresh salsa that goes inside the omelet-
1/2 Tomato chopped
Small handful of cilantro chopped
2 Green onions chopped
1 Serrano pepper chopped (this will give it quite a kick, if you don't like too spicy you can use half a Serrano.)
Mix all the salsa ingredients and set aside. In another bowl mix the eggs with a bit of half & half and salt & pepper. In a frying or omelet pan melt a tablespoon of butter. Pour the egg mixture and start cooking up your omelet. When I was in junior high I took home ec. and one of the first things we learned was how to cook an omelet. You use your spatula to push the sides of the omelet in and then swirl your pan to get the uncooked egg yolk that is in the middle over to the sides of the pan. Keep doing this until your egg is no longer runny. Add the cheese, bacon, and fresh salsa onto one half of the omelet then take your spatula and fold the other side of the omelet to cover the filling. At this point you can turn off the heat and just let the cheese melt.

According to Chris again, I also made the best juice thus far for lunch today.
1 Mango
1/2 Lemon
1/2 Pineapple
1 Small container of raspberries
