Slow Cooker BBQ Ribs and Mac n Cheese

Tonight's dinner was baked macaroni and cheese and barbecue ribs. Delicious!


Baked Macaroni and Cheese

1 13.5 oz. box of elbow macaroni
1 cup of milk
1 cup of cream
4 tbs. butter
4 tbs. flour
2 cups of shredded cheddar cheese
1/2 tsp salt
1/4 tsp. pepper

Preheat oven to 400 degrees. Butter your baking dish, mine was a 2qt. size one. Cook macaroni according to package directions and drain. In a large sauce pan melt butter and stir in the flour stirring constantly so that it doesn't burn or clump up. Add the salt and pepper. Slowly add the cream and milk and keep stirring constantly. Bring to a boil for 2 minutes and then lower the heat to a simmer and keep stirring for another 5 minutes. Turn heat to low and add the cheese slowly while stirring. The trick to this recipe, stir stir stir. Once the cheese has melted turn the heat off and add the macaroni and, you guessed it, stir. Pour the cheesy goodness into your baking dish and bake for 20 minutes.

The ribs were last nights dinner revisited. I made ribs in the crockpot yesterday and had leftovers for today. I placed them on a baking pan covered them in sauce and baked along with the mac and cheese.

Slow cooker Barbecue Ribs

4 lbs. country style ribs
1 bottle of your favorite barbecue sauce
Onion powder
Garlic Powder
Salt
Pepper

Rub spices onto ribs. Place in crockpot.  Cover with a bottle of your favorite barbecue sauce. Cook on low for 9 hours. The ribs were falling off the bone, well seasoned and saucy. Super easy!
