I've got a couple of things to share with you...first of all I wanted to let all my followers know that I will no longer be posting product reviews and giveaways on this blog. I am excited to announce that I was chosen to be a contributor of Girly Girl Giveaways and will be posting all product reviews and giveaways there. I do have a couple final reviews that will be posted on this site until all my current giveaways have ended. Start following me along with Joy and Gloria at Girly Girl Giveaways! Second we are moving back to Alaska! That's right..after a year in Bakersfield, CA we have decided to move back up to Alaska and just in time for the snow! Penelope is very excited about the snow...So this blog will go back to what it originally was, a personal blog about my family, our activities and my cooking. Keep following I promise I will have some interesting stuff about the Land of the Midnight Sun. The next month or so will be pretty crazy with the move and all so I will not be posting as often but once we get settled in our new home I will be back up and running. Stay Tuned...
Penelope's latest love are dinosaurs so since we were going to be in San Diego I thought I would take her to Balboa Park and the Natural History Museum. A couple of days before our visit I told her I was taking her to see the dinosaurs and she said "oh see dinosaurs go raaawr." I explained to her that we were just going to see dinosaur bones and statues because dinosaurs are no longer living and she said "oh dinosaurs live in Alaska." "No Penelope dinosaurs are all gone." I said and her response was "oh dinosaurs live in museum." She was so excited when we arrived at the museum, she was running from exhibit to exhibit pointing and jumping up and down and of course roaring. Here are some pictures of our visit...
Here are a few more pictures that I took while walking around the park and visiting the Japanese garden.
I love this picture Penelope turned around and said to me "I look at this one mommy" and she stared at it for a long time. |

This morning when Penelope woke up I heard her on the monitor yawn and say "another beautiful sunny day." I had to take her to the park after that it was way too cute. Here are a couple of pictures of her enjoying her beautiful sunny day...
I made my own version of Egg Drop Soup today. I was a little worried it wouldn't come out right but it tasted pretty good. It was different then your typical Chinese restaurant Egg Drop, not so egg-y tasting. I thought I went a little overboard on the ginger but Chris and Penelope both loved it so here's my recipe.
4 Cups of Chicken Broth
1 Tbsp Cornstarch
Garlic Powder
1 tsp or a little less of Ground Ginger
1 tsp or a bit more of Soy Sauce
4 Eggs
Salt and Pepper to taste
Pour chicken stock into a pot that has not been heated and whisk in the cornstarch. Add the garlic, ginger and soy sauce. Turn on the stove and heat until boiling. Meanwhile, whisk together the 4 eggs in a measuring cup. When the soup starts to boil turn off heat and slowly pour in the egg with one hand while stirring the soup in one direction with a fork. Season with salt and pepper to taste.
We had our Egg Drop Soup with my Bacon Fried Rice. I could tell Penelope enjoyed tonight's dinner because not only did she have seconds but she didn't talk through the whole entire meal.
