Still More Halibut...
August 25, 2011Are deep freezer is still stocked with Chris and Regan's catch so guess what was for dinner? I asked Chris how he wanted his halibut and he said cheesy. Hmmm, so I came up with this. I am calling it Halibut w/ Cheesy Sauce!
Halibut w/ Cheesy Sauce
1 Cup of Cheddar Cheese
1/2 Cup of Sour Cream
1/2 Cup of Mayonnaise
About 1 tbsp of Lemon Juice
2 tbsp of flour
Handful of chopped Green Onion
Cajun Seasoning
4 Halibut fillets
Preheat oven to 425. Grease a baking dish with butter. In a bowl mix the first 6 ingredients until well blended. Sprinkle Cajun seasoning generously on both sides of the halibut fillets and place in baking dish. Completely cover each fillet with the cheese mixture. You will have plenty of the cheese mixture leftover, it also tastes good spread on french bread and baked in the oven so put it away in the fridge for tomorrow! Bake halibut for 10 minutes and then reduce the heat to 350 and bake for another 15 minutes. We had ours with broccoli, a side of white rice would be good with it also but we are trying to cut back on our carbs. :)
