I made my own version of Egg Drop Soup today. I was a little worried it wouldn't come out right but it tasted pretty good. It was different then your typical Chinese restaurant Egg Drop, not so egg-y tasting. I thought I went a little overboard on the ginger but Chris and Penelope both loved it so here's my recipe.
4 Cups of Chicken Broth
1 Tbsp Cornstarch
Garlic Powder
1 tsp or a little less of Ground Ginger
1 tsp or a bit more of Soy Sauce
4 Eggs
Salt and Pepper to taste
Pour chicken stock into a pot that has not been heated and whisk in the cornstarch. Add the garlic, ginger and soy sauce. Turn on the stove and heat until boiling. Meanwhile, whisk together the 4 eggs in a measuring cup. When the soup starts to boil turn off heat and slowly pour in the egg with one hand while stirring the soup in one direction with a fork. Season with salt and pepper to taste.
We had our Egg Drop Soup with my Bacon Fried Rice. I could tell Penelope enjoyed tonight's dinner because not only did she have seconds but she didn't talk through the whole entire meal.

Here is Penelope's lunch for today. As soon as she saw it she said "Wow, it's beautiful." Then she started flying her butterfly around. :)
Turkey and cheese butterfly sandwich with carrot spots and carrot antennae, olive bugs crawling around on the grass and flower apples.
I received a package today from one of my Japanese penpals. She sent me some cute paper cups and a bag for Penelope's bento's and she also sent some spicy rice crackers called Kakinotane and a sweet treat for Penelope. She called it chocolate pie, they are these little puff pastry type cakes filled with chocolate. Yummy. Thank you Ayako!
Penelope went to her very first movie today. I was so nervous because I wasn't sure how she was going to do. The only movie she will sit through at home is Shrek and she doesn't watch live action movies. I took her to go watch the movie Cats & Dogs with a group of her friends and she had a blast and did wonderful. When we first got there I could tell she was a little nervous.
She did so good and only started getting a little antsy towards the end of the movie. Chris is going to be happy to hear this because he has been bugging me about taking her to the movies for awhile now but I didn't think she was ready. I guess she proved me wrong! Next show Shrek 3 at the dollar theatre.
I know I have been slacking big time when it comes to making Penelope's bento's. She is so excited whenever she sees one for lunch too so I need to keep it up. When she saw her bento today she said "woooow" and then "stars mommy stars!".
Top tier: Hummus, Naan Bread, Green Olives and 2 star Tomatoes
Bottom tier: Red & Green Grapes with Strawberries
Penelope and I are finally back from our mini vacation to visit family in San Diego. We were only there for 2 and 1/2 days but it was nice to see everyone. Penelope had a great time visiting with her cousins and I really enjoyed being out of the Bakersfield heat. I am especially glad to be home after our unplanned adventure on the way home. What would have normally taken me about 3 hours and 45 minutes to get home took 7 hours! First we were stuck in traffic for what seemed like hours in LA. Then when I finally thought we were out of it we hit Burbank only to be stuck in more traffic. It was stop and go for about an hour and why? Not sure what happened but the highway patrol was out in full force and had completely closed I-5 and we were detoured to highway 14, towards Palmdale, Lancaster. UGH! I am not familiar with the area so I called up Chris and mom who told me that the 14 would eventually meet up to 58 which goes straight through Bakersfield. Unfortunately I would have to drive through the Mojave desert and it would tack on a couple of hours to my drive. Are you serious?! We ended up stopping in Lancaster and filling up on food and gas, poor Penelope was starving. We left San Diego at 9am and made it home to Bakersfield at 4pm. I am so glad Penelope is such an easy going kid and a happy traveler. She didn't fuss at all but I did get very tired of listening to the same CD like 10 times. Oh well, if it makes her happy to sing along to Pop Goes the Weasel and Skip to My Lou over and over and over again I guess I can put up with it...
